Banana Bread Bars with Brown Butter Frosting

I have made these banana bread bars with brown butter frosting a few times for different family parties.  Everyone RAVES about how good they are.

They are more of a banana cake consistency rather than a banana bread. But this works out perfectly.  They need to be more dense in order to hold the amazing tasting brown butter frosting that gets spread on top.

They are also great dessert if you are baking for a large amount of people. You can get a lot of squares out of one recipe.

I get asked how to make these all the time, making it another favorite recipe of mine that I had to share.

Banana Bread Bars with Brown Butter Frosting

Banana Bread Bars with Brown Butter Frosting

Ingredients

Bars

  • 1 ½ cups sugar
  • 1 cup sour cream
  • ½ cup butter, softened
  • 2 eggs
  • 1 ¾ cup (3-4) ripe bananas, mashed
  • 2 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking soda
  • ¾ tsp. salt
  • ½ cup chopped walnuts (optional)

Frosting

  • ½ cup butter
  • 4 cups powdered sugar
  • 1 ½ tsp. vanilla
  • 3 Tbsp. milk

Instructions

  1. Heat oven to 375 degrees.
  2. Grease and flour a 15x18 jelly roll pan (or a cookie sheet with sides).
  3. In a large bowl, beat together sugar, sour cream, butter and eggs until creamy.
  4. Blend in bananas and vanilla.
  5. Add flour, baking soda and salt and blend for one minute. Stir in nuts.

  7. Spread batter evenly into pan.
  8. Bake for 20-25 minutes or until golden brown.

Frosting

  1. Heat butter in a large saucepan over medium heat until boiling.
  2. Let butter turn a delicate brown and remove from heat immediately.
  3. Banana Bread Bars
  4. Add powdered sugar, vanilla and milk. Whisk together until smooth.
  5. It will be thicker than a glaze but thinner than a frosting.

  7. Spread on warm bars with spatula.

Note: I began making the frosting when the bars only had about 10 minutes left to bake. You do not want to let the frosting sit too long before spreading on the bars or it will make it very difficult to spread. If this happens, reheat the frosting in the microwave for a short amount of time to make it thinner and spread better.

        They are delicious! I have not used the frosting recipe for any other desserts, but I’m sure there are many desserts it would taste fantastic on 🙂

        The bars should keep 5-7 days in a tightly sealed container in the refrigerator. Enjoy!
