Lemon Bars

 There is no other way to describe these lemon bars other than MELT IN YOUR MOUTH FANTASTIC!

The crust is very buttery and is the perfect base for the slightly tart lemon filling.  There are not many ingredients that go into these bars and if you bake regularly, chances are you will have most of them already on hand.  They also don’t take much time to put together, so it is a great recipe if you need a quick dessert.

Lemon Bars

Ingredients

Crust Ingredients

  • 2 sticks soft butter (Do NOT substitute!)
  • 2 cups flour
  • 1 ½ cups powdered sugar

Filling Ingredients

  • 4 eggs
  • 2 cups granulated sugar
  • 4 Tablespoons Flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup lemon juice (preferably fresh squeezed)

Instructions

  1. Preheat oven to 325 degrees.

For the crust

  1. Sift flour and sugar together.
  2. Cut in butter. If you don’t have a pastry cutter, use two knives (I think it works just as well).
  3. Pat in ungreased 9x13 pan and be sure to put the crust up on the sides of a little bit.
  4. Bake at 325 degrees for 15 minutes and then at 350 degrees for 15 minutes. The crust should be a light brown.
  5. Lemon Bars

For the lemon filling

  1. Beat all filling ingredients together and pour over crust.
  2. Crust does not have to be cool.
  3. Bake at 350 degrees for 25 minutes.

  5. Sprinkle with powdered sugar and cut into desired number of squares.

MY NOTES: If the lemon filling is a little runny in the center, put the bars in a cool place to store.  Also, it is not as messy to cut the bars if you *slightly* wet the knife before cutting them.
