Roasted Brussel Sprouts with Bacon

Brussel Sprouts are one of those veggies that always gets a bad rap.  Kids hate them, most adults don’t like them.  I admit….they can be kind of boring and bland if they are just steamed.

So what do you do with these cute, little cabbage-looking vegetables to make them more appealing to eat??  It’s the same answer that I give with most other vegetables……roast them, of course!  Even if you have never been a fan of these, you have to give this roasted brussel sprouts with bacon recipe a try.

These roasted brussel sprouts with bacon are so easy to put together and make a fantastic side dish to most meals.  I promise you will enjoy these and never look at them the same way again!

Roasted Brussel Sprouts with Bacon

Roasted Brussel Sprouts with Bacon

Ingredients

  • 1 1/2 pounds brussel sprouts
  • 2-3 Tablespoons olive oil
  • 2 garlic cloves, minced
  • Salt and Pepper to taste
  • 4 bacon slices (or Italian pancetta), cut into 1/2 inch strips

Instructions

  1. Preheat oven to 400 degrees.
  2. Rinse brussel sprouts and trim off the tops. Cut the sprouts in half, lengthwise. A lot of the outer leaves will fall off, but put them in with the rest of the sprouts because they bake up crispy and delicious.
  3. Brussel Sprouts
  4. In a medium bowl, combine brussel sprouts, minced garlic and olive oil. Toss to coat.
  5. Line a cookie sheet with aluminum foil and lightly spray with cooking spray.
  6. Pour brussel sprouts onto cookie sheet in a single, even layer.
  7. Sprinkle with salt and pepper and layer the bacon pieces evenly throughout the sprouts.
  8. Brussel Sprouts
  9. Roast in oven for 20-30 minutes. Turn the sprouts halfway through the cooking time to be sure they bake evenly.
  10. Bake until golden and serve immediately.
